What is the perfect recipe to make coffee?

Previously everything was very easy. Coffee was mixed with hot water, filtered, served, and enjoyed.

Nowadays, we don’t just want to drink coffee, but a well-prepared, rich, and balanced coffee (this means a balance between aromas and flavors, acidity and sweetness, mouthfeel, etc.)

To share, we start with a standard recipe (enough for two large cups or four small cups).

Brewed Coffee
step by step

  1. Boil approximately 800g of fresh (preferably filtered) water.
  2. Prepare your favorite drip method with a white paper filter on top of your coffee carafe.
  3. Weigh 30g of your favorite Desarrolladores coffee.
  4. If whole bean, grind it medium coarse, like brown sugar.
  5. Rinse your paper filter with 100g-200g of hot water and discard that water (or water your plants when cold).
  6. Add the coffee to the filter.
  7. Start a timer.
  8. Make a pre-infusion with 90g of water, starting the pour in the center, then wait until 00:30 minutes.
  9. Add water until it reads 300g on your scale, starting the pour in the center, then wait until 01:15 minutes.
  10. Add more water until it reads 500g on your scale, starting the pour with a more delicate, slow movement and a thinner stream.
  11. Let all the water filter through, at most until 05:00 minutes.
  12. Remove your method and stir your coffee before serving with a spoon.
  13. Enjoy it and prepare another one shortly.

Common problems preparing coffee *

Too acidic

The coffee always turns out very acidic, it rather reminds you of a lemon.

Under extraction

You can extract more with:
Finer grind
Longer time
Hotter water
More turbulence

Very bitter

The residue always tastes very bitter, making you want to drink a lot of water.

Over-extraction

You can extract less with:
Coarser grind
Shorter time
Cooler water
Less turbulence

Watery

The coffee tastes like colored water. No flavor and no life.

Too much water

Try preparing your coffee with a little less water. If it always tastes watery, it lacks coffee intensity.

Heavy

The coffee is always very intense, even with weight in the mouth.

Too much coffee

Next time try using more water or less coffee. When it's very strong, sometimes you can't perceive more subtle flavor nuances.

* These tips work when the coffee is well roasted. If the roast is too high, you will always find burnt, smoky flavors. If the roast is too low, you notice cereal and vegetal flavors.
