Cada bolsa de café conlleva dos compromisos por parte de Desarrolladores de Café.

STIVEN VARGAS

Jorge Rojas is a reference in Specialty Coffee from Planadas Tolima. He has been able to show his family that coffee and the countryside do have a future.

His cousin Stiven studies and always diligently helped his cousin. His dream was to have a farm and produce high specialty coffees. Jorge saw the commitment and gave him a farm: El Proceso. That motivated Stiven even more, and he began to experiment with processing his coffee.

And why is it funky?

We affectionately call very fermented coffees “los pichitos.” Picho refers to extremely ripe fruits, almost overripe, but almost.

This coffee was harvested, floated in water to remove impurities, and then fermented for 90 hours in tightly covered dry blue barrels, without water. The result is a fusion between variety and process. The Chiroso is recognized for being very tropical, floral, and spicy. With the processing, we intensify notes of rosé wine, and together with the variety, it tastes very tropical and lavender.
