Our commitment
Each bag of coffee carries two commitments from Desarrolladores de Café.
On one side are the people producing the coffee: coffee growers who almost always get up before dawn to give us the best that their farm can offer us: the best possible quality. We cup every lot to assure its quality.
On the other side is you: we commit to roast each batch with the greatest possible care to highlight the best attributes in the cup. Do not hesitate to contact us to ask for the cupping notes of each batch. We always cup.
Excellent coffees, because good is not enough.
The protagonist of the classic is:
JORGE ROJAS
A coffee farmer who decided at 13 years old to leave school to dedicate himself to coffee and earn the family’s living.
He started with a small inherited lot and gradually made his way in the coffee world: producing traditional washed coffees to competition coffees. In 2022, he won 3rd place in the Cup of Excellence with the Geisha Honey.
Jorge Rojas loves the Colombian mountains; he not only enjoys the coffee landscape but also the routes for mountain biking.
Every cup of coffee helps change the world of a family and its surroundings.
And why is it classic?
Colombia is famous for having the best mild washed coffee in the world.
Mild washed means after harvesting the ripe coffee cherry, it is pulped to remove the skin, fermented and/or oxidized in fermentation tanks, washed with water, and then dried.
In Colombia, this type of processing translates into a citrus acidity, medium body, and flavors of chocolate, panela, and citrus. Our process additionally includes a cherry fermentation phase, so you can find more flavor nuances: sometimes fruity, sometimes floral, and sometimes spicy. But always 100% Colombian.
Because of the traditional washed process.
